I just tried to Undo a "Move to Archive" and nothing happens -- Undo isn't available as a menu option either.

The ticket is still open which unfortunately means that I have not yet
introduced undo/redo for moving messages (it is a somewhat non-trival
code-change which includes re-implementing undo/redo of
keyword/flag-changes).I still miss this feature myself.
