Is there a way to prioritize one sending account over another?

This may be covered somewhere, so apologies if it is.
I'm in the midst of moving from a gmail account to an email account that I control. I still have the gmail account active within MailMate though, so I don't miss any emails during the transition.
However, MailMate seems to prefer sending from the gmail account. I would very much like it to default to my new email, even in replies to emails sent to my gmail address. Is there anyway to do so?

Try removing the Gmail email address from the IMAP settings for the Gmail account (File ▸ Edit IMAP Account ▸ …”. That should make it unavailable as a From address.

So this seems to be in preferences : Composer -> New Message: Default account is [ ]
But doesn't work for me in Version 1.9.6 (5347).
I tried changing the order in the plist but it didn't help, so I figure it's choosing from the context even though that option isn't selected.
