Is there any way to import addresses from Thunderbird or even Mail? Doesn't appear to be.

There is no way to import addresses from Thunderbird. Maybe there is some tool for migrating Thunderbird addresses to the Address Book (renamed Contacts on Mountain Lion). MailMate supports the Address Book (Contacts) which means that importing from Mail does not really make sense.
I don't have any plans to support importing addresses from Thunderbird, but I think Thunderbird can export to a CSV (comma separated values) format which can be imported by Address Book (Contacts). If you succeed migrating then please add a comment to this ticket.

A workaround is to export your Thunderbird address file as an LDIF file. then import it to your Apple Mac "Contacts" file. It will all fit nicely and all the addresses will pop up.
