Keybinding conflict with the default

I'm truing to use ^g ^b ^c etc. but these are used by Command > Visualize and Command > MailMate, and even if I override them in the keybinding plist file (which works for other assignments) the default setting wins. Can you make the custom bindings to take over the defaults, or keep the hardwired defaults to a bare minimum?
