Copy and paste of mixed quoted and unquoted text removes all quotes

If I copy the contents of a message containing quoted text and paste it into any text document (MailMate, BBEdit, whatever), all of the quoting is lost.
For example, if I compose and send a message containing the following:-
> We are talking about moving both user accounts and devices, right?
Yes. No point in having two different arrangements.
It displays (in my BCCed copy) as:-
| We are talking about moving both user accounts and devices, right?
Yes. No point in having two different arrangements.
And if I copy the received text and paste it into a text editor, it shows up as:-
We are talking about moving both user accounts and devices, right?
Yes. No point in having two different arrangements.
