Attempting to set the font-family using the hidden defaults write command reports to use a single quote (even when using a single quote)

I am looking to trigger a specific font in my emails. I found
that I can configure this using a hidden configuration option
com.freron.MailMateMmDefaultCSS -string 'body { font-family:
"Eurostile", Avenir, sans-serif; }'
After submitting the command, I receive an error that I should "try single-quoting it".
Is this from the MailMate parsing or macOS? If the latter, I apologize; if the former, did the syntax change?
