special characters not displaying properly (when viewing S/MIME signed message in Outlook Express)

I am using S/MIME signatures on all outgoing messages by default (signing only) and have been doing so since back in 2016.
I have sent over a hundred messages to one particular sender with no complaints until recently. They have displayed just fine.
In the past days, he has asked me to send unsigned messages because the special characters are gambled (screenshot available, but quota reached).
I would suspect an issue on the recipient's side, but he is using Outlook Express. I guess he hasn't updated the software on his end ;-) it's been discontinued for 9 years.
Could it be that MailMate changed how it handles encoding signed messages with the last update? Any hints?

You can send the screenshot using “Help ▸ Send Feedback”.
I'm not really sure if a recent change might have done anything. You can try older releases here if you would like to track it down: http://updates.mailmate-app.com/archives/
