another problem with Markdown escape

This is related to ticket #1163.
I'm test-driving MailMate. I am in love with the tags and robustness. I'm okay with Markdown.
But I am bashing my head against a wall trying to reproduce the signature I've been using for years:

The problem is that Markdown interprets the row of hyphens as command to change "Donna" to an h2. Here's what I've tried:
- use "-- " which works but looks odd as it's so short
- other hyphen combos but they are interpreted as an hr (e.g., "-- --" or "- - - ")
- "+----+", "-=-=-=-" and "<---->" work but look ugly
I also tried escaping the hyphens: "\-\-\-
". This
works IFF there is Markdown code in the message body. But if not,
then it's displayed with the backslashes.
This seems as though it should be so simple! :) Any suggestions?

A possible workaround would be to use a different type of dash character. Here are 3 variants:
- – —
They have different widths as you might be able to see here: "-, –, —". Only the first one triggers Markdown transformation.
This triggers all emails to use the UTF-8 encoding, but that should not be a problem for any receiving email clients. And if it is then it's only a problem for the dash characters themselves.
Let me know if this does not solve your problem.
Note that
"-- "
is a “standard” email signature separator. If used then it should be placed above the entire signature. -
