After adding the
Ccheader using the popup in the Composer window, you can open the same popup menu and select “Use as Default Headers”. I believe this is what you are looking for. -

Perfect!
Very sorry to bother you about something so obvious. Thanks for your help!

Hi. New user. Loving MailMate so far, but for the life of me, I can't figure out this issue. You say "After adding the Cc header using the popup in the Composer window..." In my new message window, there is no popup. I've ctrl-clicked and right-clicked and there is no popup. I've enabled markdown in preferences>composer, but, still, nothing. Can you tell me what I'm doing wrong? How can I add a Cc? Thanks.

@Gallen: To the far left of the status bar in the Composer there is an icon with horizontal lines. Click on that to open the popup (or hit ⌃⌘H).
