need two line breaks to show one in preview

When I reply to messages, the preview and email as received have the wrong number or line breaks. If I hit return at the end of a line, it correctly goes to the next line. Hitting return twice, with the intention to create a blank line between paragraphs, fails with behavior apparently the same as hitting return once. To get one line of blank space between paragraphs I need to hit return three times. Hitting it more times after the initial ignored line does get me more lines. This does not happen new emails, plain or markdowned.

It's only in “Plain Text” mode that blank lines are strictly respected. The definition/handling of Markdown collapses whitespace.
If you only need this to get more space between paragraphs then it's primarily a styling issue, that is, the best way to solve it would likely be by using CSS. Unfortunately this is still a bit low-level to customize in MailMate.
If you don't use Markdown then you can disable it in the Composer preferences pane (by default). Don't worry about how MailMate displays the message since then only the plain text part is sent and it's up to the receiving email client how it's displayed (just like when MailMate receives a plain text message).

I use and like Markdown, but I need to be able to put space between paragraphs etc. It sounds like you're saying there's no way to do that.

I had a similar issue, which I submitted as a ticket on May 24. When replying to messages with embedded HTML, the newlines do not work at all. Discarding the embedded HTML seems to solve the issue, the newlines work as expected again.

I might have misunderstood the issue. Could you check the latest test release to see if that behaves better: r5810
To get multiple blank lines between paragraphs then you need to trick the Markdown-converter, e.g., by inserting a non-breaking space using ⌥+space on each line.
