I have a TON of emails that are basically:
The server couldn't retrieve the following message:
Subject: "Skylar "
From: "Not available" ("Not available")
Sent date: 7/30/2020 2:07:01 AM
The message hasn't been deleted. You might be able to view it using either Outlook or Outlook Web App. You can also contact the sender to find out what the message says.
How do I keep this from happening? Searching for the subject on Outlook Web App does not return anything with that Subject or near the listed time.

Those messages are not generated by MailMate. It's what's really fetched from the server apparently in place of the real messages. You should definitely NOT delete them since I think something else might then be deleted on the server (even if you cannot find them now).
I believe Exchange IMAP works using some kind of connection to the actual Exchange server (used by Outlook and Outlook webmail). It seems this connection might be down or limited in some way, but it might be a temporary issue. You can force MailMate to try to refetch a message by using “Message > Reset...”.
I'm afraid there's not much else I can offer you. It's an IMAP server issue.
