  It is a long list, so some of the answers are quite brief. I hope they are useful to you. Maybe you should try MailMate and then ask about the things you cannot do and I'll tell you if it's possible or not. I'll close the ticket, but you are welcome to write follow-up notes/questions anyways.

  1. Creating a mailbox on the fly when moving (transferring) a message.
     No. Maybe some day, but MailMate encourages you to use smart mailboxes for as much as possible.

  2. Labels and filtering (e.g., flag message "to do" and color brown; set filter to change all incoming staff messages to "staff" and green).
     No, but on the todo.

  3. Option-clicking sender in mailbox to instantly group all emails by that person.
     Yes.

     a. Option-clicking label to instantly group all emails with that label.
     No, but it is possible (low-level feature for now) to create a smart mailbox which automatically divides all messages into submailboxes based on labels (IMAP keywords).
     b. Option-clicking subject to group all emails in that thread (without resorting the entire rest of the mailbox).
     Yes.

  4. Changing text of subject header in mailbox.
     No. Read more here.

  5. Ability to set global reply preferences to always reply to sender, rather than group, for listserve messages.
     No, but you are welcome to make a separate (detailed) feature request to discuss this in detail.

  6. Ability to see which messages are still on server and to delete selected messages from server.
     MailMate is IMAP only. Messages are always on the server.

  7. Instant clue (I bar cursor turns to arrow) that drag-and-drop is enabled when text is selected.
     No (MailMate uses NSTextView which is a standard component with standard behavior).

  8. Smart drag-and-drop (adding spaces around words).
     Yes (at least how it works in NSTextView).

  9. Command-F to find any text in currently open mailbox (to, from, or subject header)
     Yes. Although different shortcut and you can configure what should be searched by default (see the “Edit ▸ Find” menu.

  10. Ability to double-check links I'm about to send in an email by clicking on them.
      Yes. (Works better in the next update of MailMate where you are required to hold down ⌘ or use the context sensitive menu.)

  11. Robust search feature with advanced options: ability to search selected or all mailboxes, to search by date or date range, to choose specific component of message (To:, From:, Subject:, etc.), and to combine options in order to limit search.
      Definitely yes. There are few if any other email clients with the search capabilities of MailMate.

  12. Ability to control-click on mailbox in search results to see its path.
      Not sure exactly what you mean. If you mean its mailbox/folder then there is a messages outline column which can be enabled to show the mailbox (path).

  13. Ability to edit an incoming email.
      No. Again, read more here.

  14. Preference that allows viewing email in viewer window without marking it read.
      Yes, this is an option in the next update of MailMate.

  15. Ability to choose to either attach document in header area or to embed in email, via drag-and-drop into header or into email.
      No, currently MailMate does not support inlined attachments. Also, MailMate is plain text only with the exception for the support of the Markdown plain text markup language. I would like to support inlined images some day, but I have no time frame.

  16. Ability to "paste as quotation" that includes sender, time sent, etc. at top of quotation.
      Not sure I understand? How/when do you do this? Is it related to forwarding a message?

  17. Ability to "send again" when message is returned with fatal errors or incorrect address, and get original message correctly formatted for sending.
      Yes. Sent messages can used as basis for new messages (⇧⌘D).
