I have a few clients that cannot grok PGP/MIME.

I've had a look in the defaults for com.freron.MailMate, but there isn't a setting that influences this, is there?

No, such a setting does not exist. Given that it would require quite a lot of effort to implement and that it could be considered harmful, it's unlikely that I'm going to implement it. Sorry.
